3 tablespoons duck fat or vegetable oil
1-1/4 teaspoons kosher salt, divided

Preheat oven to 450°F. Spray large baking sheet with cooking spray.
Duck fat is worth the seeking out online or in specialty shops for the best flavor and crunch but if you don’t have any, vegetable oil works great too.
Cut potatoes into 1/4-inch sticks. Place in large saucepan and cover with cold water. Bring to a boil and cook 3 minutes; drain and shake dry. Place fries in large bowl and toss with duck fat or oil and 1 teaspoon salt.
Bake 25 minutes. Turn and continue baking until brown and crispy, about 15 minutes. Toss fries with remaining salt and serve with ketchup.
For a dark coated pan, turn fries after 20 minutes. Continue baking until brown and crispy, about 15 minutes.
