1/4 cup pure maple syrup
1/4 cup coconut sugar
2 tablespoons Earth Balance® Original Buttery Spread
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/2 teaspoon baking powder
salt
1/4 cup almond flour/meal
1 cup old-fashioned rolled oats
1/3 cup dark chocolate chunks
1/4 cup chopped walnuts

In a bowl combine maple syrup, coconut sugar, Earth Balance, vanilla and cinnamon and mix until well combined and sugar is dissolved.
Whisk together flour, baking powder, salt and almond meal and add to the wet mixture.
Add the oats and mix until well combined. Add in the chocolate chunks and walnuts, folding to distribute evenly.
Cover and chill for 15 minutes.
Preheat the oven to 365°F.
Take 2 to 3 tablespoon of the dough, roll into balls and place on parchment-lined baking sheet, and flatten each cookie ball lightly on the sheet.
Bake for 11 to 12 minutes, and cool for 10 minutes before serving.
