Ingredients

  • PAM® Organic Olive Oil No-Stick Cooking Spray
  • 2 teaspoons minced fresh garlic (2 tsp = about 4 med cloves)
  • 1 pound tomatoes, chopped (1 lb = about 3 cups)
  • 1 medium onion, chopped (1 med = about 1 cup)
  • 4 tablespoons thinly sliced fresh basil leaves, divided
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 8 ounces dry rotini pasta, uncooked
Makes: 4 servings (1-1/2 cups each)

Directions

  1. Spray large skillet with cooking spray. Add garlic; cook over medium heat 1 to 2 minutes or until golden brown, stirring frequently. Add tomatoes, onion, 2 tablespoons basil, salt and pepper; stir. Cover. Cook 15 minutes or until onion is crisp-tender, stirring occasionally.
  2. Meanwhile, cook pasta according to package directions.
  3. Drain pasta; place in large serving bowl. Top with tomato mixture; sprinkle with remaining 2 tablespoons basil.
