Make Marinade: Place all 5 ingredients in large resealable food storage bag; seal. Work mixture with hands until combined. Remove 1/4 cup marinade mixture; set aside.
Add pork to bag; seal. Turn to coat pork with marinade. Refrigerate 20 to 30 minutes, turning bag halfway through marinating time. Soak skewers in water 30 minutes before using.
Spray grate of cold grill and utensils with grilling spray. Preheat outdoor grill on medium heat 20 minutes. Assemble skewers by placing pork cubes alternately with water chestnuts, onions, tomatoes and pineapple, as desired on each skewer. Discard bag with marinade.
Cook skewers 15 minutes or until pork is cooked through, turning and basting often with reserved marinade.
