1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies
1 container (16 oz each) cottage cheese
2 tablespoons fresh cilantro leaves
1 tablespoon lime juice
1/2 cup shredded Mexican blend cheese
vegetables, crackers, chips for serving

Pour tomatoes into a colander and let stand to drain well.
Pour cottage cheese into food processor or high powered blender and process until very smooth and creamy, 1 to 2 minutes. Pour in cilantro and pulse until chopped.
Pour drained tomatoes, cottage cheese, lime juice, and shredded cheese into medium bowl and stir until blended. Serve creamy cottage cheese dip with vegetables, crackers, or chips.
